The WAU Manager (Windows automatically updates Manager) is a full-featured replacement for the Windows Update panel. This tool will give you complete control over Windows updates, such as when and how they are installed.
It even supports uninstalling a hidden installation, or unhiding updates, for Windows updates.
Note: Recently the developer renewed the signing certificate code. So you might get some warning Smart Screen that says the file may harm your computer. Ignore the warning.
WAU Manager does not disable the wuauserv service. Windows uses the wuauserv service for many things besides installing the latest updates, such as updating applications from Windows store, updating its definitions windows defender and installing feature updates. WAU Manager takes care of the latest Windows defender updates and definitions, but not the rest, so the service is still needed.
WAU Manager disables automatic updates by setting a group policy in the registry. Windows 10 does not fully respect this group policy and will still check for mandatory updates regularly. Finally it operating system installs them.
Hopefully this will change in the future when they realize that users want full control over automatic updates.
